Recipe: Potato Pancakes with Tomato and Eggs

I finally started my cooking vlog today, affectionately called “Shan Can Cook” - but for copyright reasons, I should probably do away with that quickly and come up with something better. Any suggestions?

The first meal that I made was Potato Pancakes with Tomato and Eggs. This was completely improvised, but inspired by a recipe that was sent to me in a tweet this morning. See the Videos here - http://www.youtube.com/view_play_list?p=621C5718EAA7E437

RECIPE | Potato Pancakes with Tomato and Eggs

INGREDIENTS

Shannon Seery Gude starts a cooking vlog3 Yukon Gold Potatoes
1 Medium Onion, chopped
3 cloves of Garlic, minced
1 Orange Pepper, thinly sliced (can be whatever color you wish)
3 cups of Chicken Stock
1/4 cup butter
4 eggs
1/2 pkg of cream cheese
1 tomato
1/2 cup Buttermilk
1/2 cup shredded Cheddar Cheese
Olive Oil
Parsley
Salt and pepper to taste

DIRECTIONS

Pierce the potatoes all over with a fork and put in a pan with the butter, about 1 tsp of salt, and enough chicken stock to cover the potatoes. Boil until soft enough that you can slightly ‘pop’ the potatoes by pushing down on them with the bottom of a glass (about 10-12 minutes). Once you ‘pop’ them, let them cook approx 10 minutes longer to allow the potatoes to soak in the stock.

In a Medium frying pan, heat some Olive Oil over medium-high heat and add the minced garlic, chopped onion, and chopped pepper - salt/pepper to taste. Once translucent and starting to brown slightly remove from heat and set aside.

Drain the potatoes and let cool to the point where you can hold them and peel off the skin. Add the potatoes to a bowl and add in the garlic, onion, and pepper mixture. Mash together with a potato masher or fork. Stir in the buttermilk OR milk and add salt and pepper to taste (if desired). Stir to mix well. Texture can still be somewhat lumpy. Shape mixture into 4-6 pancakes.

Coat a large *nonstick skillet* (and I can not emphasize enough, NONSTICK) with olive oil. Cook the pancakes over medium-high heat, until browned on one side, about 2 to 3 minutes. Turn with a spatula, and brown the other side. In another pan, fry the eggs to your liking: sunny-side up; over-medium; over-hard.

PRESENTATION

Transfer the browned pancakes to plates and top each with a 1/4 inch slice of cream cheese. Place a slice of tomato on top of that (some salt and pepper if you wish). Place an egg over the tomato and finish it off with some Shredded Cheddar Cheese and Parsley. Serve hot. YUMMY.

The Outtakes

Creating the Series of videos was more fun than I expected - I especially ejoyed laughing at myself and noticing that I start every segment with “OK” or “Ready”. This may sound like a breakfast meal, but we made it for dinner. I have also never made potato pancakes before, so viewers missed many of my mishaps such as, while transferring onions to the pan for saute, my arm bumped the Knife block and sprayed onions all over the place; and how I only have stainless pans, so my pancakes stuck to the bottom and really remained mashed potatoes that were slightly fried. And how I forgot to take a picture of my finished product for these show notes. :-) Good times.

So where did this cooking passion come from?

I love to cook and take great pleasure in amazing my friends and family with meals that I whip up. I am the oldest child in a pretty large family and grew up with my mom always cooking. My mom was by no means a gourmet cook, but I think that I learned how to make the most of what is in the cubberts from her. Also, being in the restaurant business, she worked most holidays and I would often be the one stuffing and watching over the Turkey - but my passion really started in college and just grew. By some miracle, the cooking love is coded in my DNA and was passed down to my beautiful little girl. Now we cook together religiously.

I am always the hostess

95% of all holiday/birthday/family gathering meals are at my house. I can spend a few hours putting a meal together and then not be hungry at the end. Seeing everyone’s faces when they taste the food is what I am really waiting for. It is sorta like the episode of Friends, The One With Rachel’s Crush, where after 2 days of cleaning and redecorating the apartment, Monica falls asleep as everyone comes over to visit:

Ross: Oh my God!

Rachel: Wow! Monica!

Phoebe: Great! Ross:

This is beautiful!

(She has cleaned it, completely redecorated it, removed the carpet, and polished the floor.)

Phoebe: Oh did you—what did you—did you work for two days straight?

Monica: Pretty much. (to Joey) So, what do you, what do you think of the floor?

Joey: I don’t know, it looks the same.

Monica: You used to have carpet.

Joey: Oh yeah!

Monica: So I made snacks. Please, just hang out okay? I’m just gonna rest my eyes just a little bit.

Ross: Look, Mon, do you want us to uh, come back later?

Monica: Oh no-no-no, stay, stay, stay, just keep talking. I’m always the hostess.
